Black pepper is the world's most widely used spice, valued for enhancing other flavors rather than dominating them. Black, white, and green peppercorns all come from the unripe berries of the same plant, Piper nigrum, and share a piney, zesty base flavor, with green peppercorns adding an herbal note, though this is often overshadowed by their pungency. Pre-ground pepper loses aroma quickly after milling, so freshly ground pepper reveals a much wider range of notes, including fruity, cedar, licorice, floral, bitter, cinnamon, tobacco, mint, citrus, and pine. White peppercorns come from the same berries as black but are left to ripen and have their husks removed before drying, while pink peppercorns are not true peppercorns at all but dried berries from unrelated plant species. This category also includes long pepper, grains of paradise, sansho pepper, Sichuan pepper, cubeb pepper, and Timur pepper.
