Bell Pepper

About

Green bell peppers are unripe red peppers, and the two differ substantially in flavor despite being grouped together; yellow and orange peppers are, flavor-wise, closer to red than to green. As an unripe fruit, green pepper is more bitter with a fresher, grassier taste, while heat-ripened red pepper is sweeter and fruitier. The two are not always interchangeable: green pepper's freshening quality suits stir-fries in a way red does not quite match, and red pepper's sweetness does not fit every dish that calls for green's bitterness.
