Fenugreek
About
Fenugreek seed has a mild, maple-syrup-like sweetness at low concentrations but becomes much sharper and more pungent in larger amounts. Raw seeds are very hard and taste faintly medicinal; soaking softens them and reveals walnut- then celery-like notes. The plant's leaves have a mild, bitter, green-bean-like flavor when fresh, and a muskier bitterness when dried; dried leaves (methi) are also used to flavor bread dough.
