Turnip
About
Turnips have a white-pepper-like flavor combined with a rustic, root-vegetable sweetness, and pair well with similarly earthy, robust ingredients. Their main limitation is textural rather than flavor-based, as they tend toward wateriness. Turnips can be eaten raw, especially when young and small, when their flavor has much in common with radish. This entry also covers turnip greens.
