Caraway

About

Caraway seed is the dried fruit of Carum carvi, a plant related to parsley, celery, coriander, and asafoetida. It is often compared to anise seed, though the two are clearly distinguishable, as tasting kümmel, a caraway spirit, against anise-based pastis makes plain. Caraway's main quality is a cleansing flavor that works well with fermented and cured foods, such as salt beef or sauerkraut, and it also pairs well with boiled eggs, strong cheeses, and cumin. Beyond the seeds, caraway's root and young leaves are edible; in Vietnam, the seeds are sprouted for use in salads.
