Elderberries grow from elderflower blossoms into small black berries that are toxic raw, containing cyanogenic compounds that can cause nausea or worse, along with an unpleasant, urine-like raw aroma and high citric acid content. Cooking removes the unpleasant qualities and, like rhubarb, gooseberry and cranberry, elderberries need added sugar to taste good. Ripe berries are picked when nearly black and slightly soft, then stripped from their stems; dried berries are also used in cooking, sometimes preferred for baked goods like pies.
