Rye
About
Rye has a strong, sweet-and-sour, rustic character, most pronounced in whole grain and pumpernickel forms; blander versions include white rye flour, with the bran and germ removed, and medium rye flour, with only some removed. Dark rye pairs well with robust ingredients like pastrami, smoked seafood, and cabbage rather than delicate produce. Its proteins and enzymes behave differently from wheat flour when mixed with water, giving it a lower gluten content, a denser resulting bread, and a dough that is prone to stickiness due to its high level of complex sugars called pentosans. Used in small amounts, however, rye is easy to work with, and replacing 5-10% of wheat flour with rye can improve a bread's flavor.
