Lychees have translucent, gelatinous pink flesh that is sweet and rose-scented, encased in a rough, reddish husk around a shiny seed. Flavor declines quickly after picking, so freshness matters; some varieties are firm, crisp, and acidic, while others are juicier and sweeter, and the best are described as "dry and clean," releasing little juice when the skin is broken. Dried lychees turn dark and taste somewhat like dates. Authentic lychee flavor, woody and honeyed with caramel and sulfurous notes, is difficult to reproduce synthetically, and artificial versions tend to overemphasize the rose character. In Sichuan cuisine, the term "lychee flavor" describes a sweet-and-sour balance where sourness is slightly more pronounced, evoking the fruit rather than containing it.
