Most fresh cranberries are processed into juice or preserves because their raw flavor is harsh and needs substantial sugar to become palatable; even cooked with sugar, cranberry has a relatively mild, tart-apple-like character. Its appeal lies more in texture and color than flavor: cooked berries have a gelled bite with sour, bitter, tannic notes, and a strong red-pink color.
