Passion fruit

About

Passion fruit shares flavor compounds with fine cognac, whisky, and Virginia tobacco. It comes in purple (subtropical) and yellow (tropical) varieties, both intensely fragrant and acidic, with a faint sweaty note alongside their sweetness. If the shell is smooth at purchase, it should be left at room temperature until wrinkled, then refrigerated; for longer storage, either the whole fruit or just the pulp can be frozen.
